Summer purslane is a sun-lover that keeps producing tender shoots through hot, dry spells — just the thing when lettuces bolt. The fleshy leaves are rich in omega-3s, lovely raw or lightly cooked, and the plants are about as low-maintenance as salads come, fitting right in with our fast-growing vegetables.

Growing purslane from seed

Sow from late spring once the soil has warmed, scattering the fine seed thinly onto the surface and barely covering it.
